Fluffy Pancakes (Classic American)
Ingredients:

1 cup flour
-
2 tbsp sugar
-
1 tbsp baking powder
-
1 cup milk
-
1 egg
-
2 tbsp melted butter
-
Pinch of salt
Instructions:

Mix dry ingredients (flour, sugar, baking powder, salt).
-
Add egg, milk, and melted butter — stir gently (don’t overmix!).

Heat a pan and pour ¼ cup batter for each pancake.

Cook until bubbles appear, flip, and cook until golden.
-
Serve with butter + maple syrup.
Crêpes
Ingredients:

1 cup flour
-
2 eggs
-
1 ¼ cup milk
-
2 tbsp melted butter
-
1 tbsp sugar
-
Pinch of salt
Instructions:
-
Whisk eggs + milk.
-
Add flour, sugar, and salt — whisk until smooth.

Stir in melted butter.
-
Pour a thin layer into a lightly greased pan.
-
Cook 1–2 minutes per side until lightly golden.
-
Fill with Nutella, jam, lemon + sugar, fruit — anything!
Japanese Soufflé Pancakes
Ingredients:

2 eggs (separate whites & yolks)
-
2 tbsp milk
-
¼ cup flour
-
2 tbsp sugar
-
½ tsp vanilla
-
½ tsp lemon juice
Instructions:

Mix egg yolks + milk + vanilla + flour into a smooth batter.

In a separate bowl, beat egg whites + sugar + lemon juice into stiff glossy peaks.

Gently fold the meringue into the batter (don’t deflate).
-
Scoop batter onto a low-heat pan in tall scoops.
-
Cover and cook 4–5 minutes per side until jiggly, soft, and golden.

Serve with whipped cream, berries, or maple syrup.
