Fluffy Pancakes (Classic American)

Ingredients:

  • 1 cup flour

  • 2 tbsp sugar

  • 1 tbsp baking powder

  • 1 cup milk

  • 1 egg

  • 2 tbsp melted butter

  • Pinch of salt

Instructions:

  1. Mix dry ingredients (flour, sugar, baking powder, salt).

  2. Add egg, milk, and melted butter — stir gently (don’t overmix!).

  3. Heat a pan and pour ¼ cup batter for each pancake.

  4. Cook until bubbles appear, flip, and cook until golden.

  5. Serve with butter + maple syrup.

Crêpes 

Ingredients:

  • 1 cup flour

  • 2 eggs

  • 1 ¼ cup milk

  • 2 tbsp melted butter

  • 1 tbsp sugar

  • Pinch of salt

Instructions:

  1. Whisk eggs + milk.

  2. Add flour, sugar, and salt — whisk until smooth.

  3. Stir in melted butter.

  4. Pour a thin layer into a lightly greased pan.

  5. Cook 1–2 minutes per side until lightly golden.

  6. Fill with Nutella, jam, lemon + sugar, fruit — anything!

Japanese Soufflé Pancakes

Ingredients:

  • 2 eggs (separate whites & yolks)

  • 2 tbsp milk

  • ¼ cup flour

  • 2 tbsp sugar

  • ½ tsp vanilla

  • ½ tsp lemon juice

Instructions:

  1. Mix egg yolks + milk + vanilla + flour into a smooth batter.

  2. In a separate bowl, beat egg whites + sugar + lemon juice into stiff glossy peaks.

  3. Gently fold the meringue into the batter (don’t deflate).

  4. Scoop batter onto a low-heat pan in tall scoops.

  5. Cover and cook 4–5 minutes per side until jiggly, soft, and golden.

  6. Serve with whipped cream, berries, or maple syrup.
